MAISON Ë • A Portrait of Chef Hugo Roellinger

As part of my collaboration with Maison Ë magazine, I wrote a portrait of Michelin three-star chef Hugo Roellinger. The piece traces his distinctive career, his deep-rooted connection with the sea, and his vision of a plant-led cuisine attuned to the living world.





Heir to the iconic Maisons de Bricourt — founded in Cancale by his parents, Jane and Olivier Roellinger, a visionary chef and former holder of three Michelin stars — Hugo Roellinger both preserves and reinvents the spirit of these exceptional places. The guesthouses and restaurants, including the renowned Relais & Châteaux property, the orchard conservatory and the spice house — conceived by his father and now developed by his sister Mathilde — form a family-run ecosystem deeply anchored in the maritime imagination and the corsair history of Saint-Malo and Brittany.

 

Enriched with excerpts from Correspondances, co-written with author and poet Ryoko Sekiguchi (Éditions Sur La Crête, 1 October 2024), the article unfolds as a sensory voyage, blending gastronomy, the Breton landscape and a philosophy of the long view.
